Southwest Roll-up Recipe

Since a couple of people have asked for it, here is the recipe for Southwest Roll-ups. I got it from Crystal Paine's Simply Centsable Suppers eBook, which can be found here. It is a great eBook...I have used it countless times!

Combine 1 cup of chopped, cooked chicken, a can of refried beans, and 2 T of salsa (or however much you want). Divide mixture amongst flour tortillas (I use whole wheat ones...you can use 10-12 small ones or 4-6 regular sized ones), top with cheese, and place in a baking dish and bake at 350 for 20-30 minutes. I serve with sour cream and extra salsa. :)
